Tuesday Tasting Cuba

Tonight we visit Cuba. Their food is yummy.
So tonight I create Moho chicken, Black beans, rice, and plantains oh so yummy.

Lets begin with the marinate for the chicken
1 large orange squeezed
1/2 of a lemon squeeze
a few good shakes of cumin
a pinch or two red pepper
2 gloves of garlic minced
Let this marinate for a few hours the grill it.

Black Beans
2 can of black beans any size can is fine
1 med to small onion
1 Cuban pepper roasted
salt pepper
sweet vinegar
a far amount of fresh garlic
Lets cook the beans begin by saute your onion, garlic and the roasted pepper. Get them nice and caramelized. Dumped your beans in with all the liquid plus 1/2 can of water. Add you seasoning the pepper salt cumin add the vinegar last. Bring to a boil and let cook on stove till your ready to serve.

Rice your going to use .a small short grain rice just follow the normal cooking direction. The needs to be plain it will detract from the flavor of the beans.

The chicken is going to be grilled until tender and moist. Now watch the chicken the acid in the orange will have broke the chicken down so cooking time might happen a little faster. When finished cut into small chunks.

Monday Menu

Well hello there and welcome to Estelle's Kitchen. Tonight we made roasted veggies and pasta with a light Italian tomato salsa. It took about half an hour to cook, but we inhaled it in five minutes. It was so light you didn't have to feel guilty.


You will need for the sauce
2 8oz. can of tomatoes
1 minced onion
1 mince garlic
salt and peper to taste
Italian seasonings
red pepper flake
you will need for the grilling
I eggplant
1red bell pepper
1 onion
1 1/2 half of a zucchini
1 half of a squash
The marinate
Great light italian dressing
balsamic vinegar
fresh garlic
salt
pepper bunch of italian seasoning

Now get the grill and we can cook our veggies heat your grill to a high heat. When finished set them on the cutting board. Heat your sauce up to a slight boil. Get your noodles ready about seven minutes for the angel hair. Drain the pasta, add some oil, Mix in your grill veggies, and last put the sauce on it. It will be a light sauce. Then add your favorite cheese and serve it up.

My family was very happy and satisfied plus I got all the daily veggies in, you need for the day!
