Stuffed Tomatoes with Chicken

Take a boring recipe and jazz it up you will not only feel satisfied, but your taste buds will beg for more! Lets take a trip to mexico, but lets get rid of the fat and, make this a healthy dish. Mexico is place where the tomatoes are the base of a lot of dishes. So lets take a tomato, a chicken and some cheese and see where the road takes us. You might not be able to take a trip, but this will sure cure any 'taste traveling' cravings you might have. Lets get started!


The chicken

Take two to three chicken breast and boil them in a pan of water until done about 20 minutes
then you are going to finely shred or food process the chicken with garlic and onion (fresh) Once that is blended take your spices and season to taste cumin, chilly powered, salt, pepper, and lime juice. Let this stand while you shell your tomatoes.

Cornbread if you have it on hand it is yummy to add to the mix just follow the directions on the box if you choose to make it gives the mix a light corn flavor with being over powering.

Set oven to 350, and now we stuff your tomatoes. Put a good tablespoon or more depends how stuffed you want them. Once they are stuffed just put cheese on them and bake for about 15 - 20 minutes just enough to heat the meat and soften the tomatoes .

It just that easy and fun! it is great as a meal or an appetizer. You will amaze your friends and yourself on how easy this was to make.
